Have you ever think of making a healthy pudding? I will be honest it doesn’t taste like the original, so if you thinking of that… I’m sorry that’s not it. But! It’s actually so good!
My mum is a lover of pudding and she really enjoyed that! She said – yes it is different from original, but it’s sooooo good! :) She finished it with a happy bunny smile :D
What I could say? It was good and healthy and an option for people like me with lactose intolerance! So yeah! :D
- ⅓ gls of millet groats
- @600ml of coconut milk
- 1x splash of olive oil
- Small pinch of salt
- 1x teaspoon of sugar/honey/ maple syrup/anything sweet + some more to sweeten it up later on for your taste
- 1x banana
Take a pot, add your millet groats and pour 1-2cm above it amount of milk, add olive oil, salt and a teaspoon of something sweet. Start simmering on a low/medium heat, until millet will be nice and soft and all the milk will be absorb.
When that’s cooked, add your 1 banana and splash some more milk and start blending everything. That’s how the magic starts! Add as much milk as you need to have a nice consistency of a pudding (thick cream) and as much of sweet thingy of your choice as you want :)
