This recipe is from my friend Kasia. And it’s just AMAZING, mind (and mouth) blowing!!! It’s soft, reach in flavour of fresh lemon and orange zest. In fairness in my home these cake will only stay for couple hours and later on it’s a fight who will have the last piece of it.
- 1x gls of egg whites (around 7-8 eggs)
- 200g of unsalted butter
- 2x gls of plain flour
- 1½ teaspoon of baking powder
- 1x gls of damerara sugar
- 1x teaspoon of vanilla extract
- orange and lemon zest
- powdered/icing sugar (for frosting)
Preheat oven to 165 ºC. Take a round tin and cover it with either baking powder or smear it with butter and sprinkle with flour or bread crumbs.
Take a bowl and a mixer, add your egg whites, pinch of salt and damerara sugar and whipped for a very stiff and fluffy mixture. It will take you a good 5-6 mins.
Sift flour and baking powder, mix it and add a bit of dry ingredients, then a bit of melted butter, and so on. Then add freshly zest of orange and lemon and squeeze a around a good teaspoon of juices from both of it. Then add vanilla extract and add it gently to your white mixture. Now move your mixture to tin and bake it for around 40mins.
When it’s ready let it cool. Then move it from tin and now you can make your frosting. It’s easy – take around 2-3 tablespoons of freshly squeezed orange and lemon juice and add icing sugar. I can’t tell you how much you need. You will see from the consistency. When it will be perfectly runny and gets white, it will be ready. If you want to you can add some zest from orange and lemon. Just cover your cake with frosting and let it cool. Do believe me, don’t away that extra frosting! It’s just too good with this cake to throw it away! Leave it to cool and enjoy!
