Pumpkin Buns

Today as per Halloween themed is the king of all the recipes the Pumpkin Buns.

You definitely know the original recipe that this ones is based on - the Cinnamon Rolls/Buns. It’s very similar make of them. I would say that they are a perfect starter to Christmas season, as they are lovely and fluffy, moist inside filled with gingerbread spices. Just so yummy!

Ingredients:

3 1/4 bread type flour (2000 type)

1/2x glass of brown sugar

a good pinch of salt

1x bag of gingerbread or mulled wine spices (in the polish shop’s they have a perfect ready to go bags for them, but if you don’t have it add half teaspoons of cinnamon and ginger and 1/4 of a teaspoon of cardamom)

1x bag of instant yeasts (around 7g or 20g of fresh ones)

60ml of water

80ml of milk

20g of butter

1x egg

For Filling:

90g of butter

100g of brown sugar

1x bag of gingerbread spices/mulled wine spices ( alternatively 2x teaspoons of grounded cinnamon, 1/2x teaspoons of grounded all spices and ginger, 1/4x teaspoon of grounded nutmeg and cloves - or any mixtures of those ;) )

Start from making the dough. In a small pot melt your butter, then add water and milk. It all should be gently warm (it will help with yeasts).

In the meantime prepare a big bowl, add all your dry ingredients, then add pumpkin puree and egg and your warm water with butter and milk. Make a dough. It should not stick into your fingers, but be very elastic and soft.
Cover with cling film and leave in a warm place for an hour to double the size.

While the dough is rising you can melt the butter for the filling in a small pot and leave it to cool a bit. Then add all your filling ingredients and mix. Leave on a side.

Prepare a tray line with baking paper.

When your dough double the size take it onto gently sprinkle with flour surface and using rolling pin flatten it down. Cover with the filling and roll (like on the pictures below). Cut to make buns and move them into a tray. Cover with kitchen cloth and leave for 15-20mins just to let the yeast do the magic for you. In the meantime you can turn on the oven to 185C degrees in fan.
When oven is ready your buns should have rested long enough too. Bake them for around 25-30mins.
