Cinnamon Buns

Mhmmmm…. Those cinnamon buns are just to die for…. I make them all the time and they are part of my all time favourite comfort food…

For some of you it would be more a winter snack, but since I have a thing to cinnamon (my grandma always calls me - the Cinnamon Girl) to me this is a proper all year round dessert.

Imagine soft dough with lovely sweet and cinnamon’y inside…. The real…. True goodness!

Without a further delay see this recipe, worth every effort! :)

Ingredients:

3/4x cup milk

100g of butter

3 1/2x cup of plain flour

10-12g of dry yeast (or 20-30g of fresh one)

1/4x cup of brown sugar

1/4x cup of water

1/2x teaspoon of sea salt

1x egg

For Filling:

100g of butter, melted

around 1x cup of brown sugar

decent pinch of salt

as much cinnamon as you wish :)

Start with making the dough:

Take a small pan and melt butter, add sugar, then salt, cold milk and cold water (just to cool down the butter). When liquid is lukewarm add fresh yeast (if using them), gently mix and leave for 10-15mins. Leave on a side.

In the meantime in a big bowl add 3x cups of flour (leave the 1/2x cup on a side and use when needed) and dry yeast (if using them).

Mix all the ingredients together to make a nice, elastic dough and the dough should only gently stick into your fingers, but will be able to peel The bits easily.

Cover with cling film and leave in a warm place for around an hour or until double the size.

While waiting for the dough you can take a pot and melt the butter for filling, leave it for 10-15 minutes to cool down. Then mix in your sugar and cinnamon. Just to make it very thick but still easy to spread.

Prepare baking tray and line it with baking paper. Leave on a side.

When your dough is ready, sprinkle the surface with flour and move the dough from bowl to surface and start rolling the most rectangular shape you can ;)

When that’s done, cover with filling leaving maybe 1-2cm off from the edges.
As my dough is usually fairly big I roll the dough from the longest side and then cut it for thumb size slices and move on a tray.

Cover with linen cloth for another 20-30mins.

Turn the oven to 175C in fan option.

Bake for around 20-25mins, until lovely and gold. Leave on a tray to cool.

I usually then cover them with lemon or orange icing - fresh lemon/orange juice mix with icing sugar :)
