Pancake Muffins

Now this recipe is more healthy’ish if you prefer, now since the whole week is like Fat Thursday week why not to start preparing yourself for Pancake Tuesday that is just in the next few days ;)

Those muffins are genuinely a fantastic lunch or quick breakfast to go idea. Lovely and fluffy, filled with whatever fruits you prefer, just like a mini pancake ;)

Original recipe comes from Thermomix.

Ingredients:

225g of plain flour (you can mix wholemeal and plain flour in half)

30g of any fat, like butter, dairy free butter, etc.

15g of brown sugar

pinch of salt

1x tablespoon of baking powder

300g of any milk or milk alternatives (I used almond and coconut)

2x eggs

any fruits of your choice - I only had frozen berries and that’s what I used - yes! They were still frozen)

chocolate chips, any flavour (optional)


Prepare a muffin tray and line it with paper cupcake cups. Leave on a side.

Turn on the oven to 175C degrees on fan.

Take a bowl and add your flour, baking powder, fat, sugar, salt, eggs and milk. Using mixer, mix everything until nice and smooth.
Using tablespoon or spatula fill up the cupcakes until 3/4 full, add your favourite fruits, sprinkle some chocolate if you wish and bake for around 15mins or until lovely and gold.

Serve straight away or enjoy following day :)
