Rafaello Cake

OMG! That’s all I can start with… This cake is absolutely insanely amazing, delicious, yummy! You name it!
It’s just so so so so good! For a long time did not come through a recipe that would be as good!

Needless to say that recipe comes from Thermomix and it’s worth every second spend at it - and I should probably mention that the longest part is to leave it in the fridge! As when you start… you will just want more… it’s just soo good! Yum!

Ingredients:

500g of milk

120g of brown sugar

150g of desiccated coconut

3x egg yolks

1x teaspoon of vanilla sugar

50g of corn starch or potato starch

50g of plain flour

230g of butter, room temperature, cut into pieces

almond flakes

around 20x crackers (might be less, all depends from your tray)

1x shot of Malibu rum (optional)

Prepare a tray - rectangular size around 25-15-10 or similar. Line the bottom with layer of crackers. Leave on a side.

Take a pot, pour some water and put a bowl on top of it. Gently start heating up the water. Into your bowl (on top of the pot with water) add milk, both types of sugar, egg yolks, 100g of desiccated coconut, flour and potato/corn starch. Constantly mixing it with whisk heat up the mixture, but DO NOT boil it! As that will make a scramble out of the eggs.

The whole process should take around 20min and you will notice it getting thicker and thicker. Then add you butter and Malibu (optional) and mix it well.

Take it off the pot and leave on a side for 5mins. Then divide the mixture into half and add first part on top of your crackers. Sprinkle with almond flakes. Put crackers on top, add another part of your mixture, sprinkle with remaining coconut and leave to cool for around 5-8hrs.
