Shortbreads

Ohhh…. Shortbreads are one of my ultimate favourite cookies EVER!
That combination of sweetness, butterness and saltiness is just UNREAL!

My first time ever trying them was the famous Walkers from UK and since that day ever I always wanted to recreate them as much as I can.

There was loads of recipes that were close, but I need to say this one - from Thermomix (surprise! ;) ) is my absolute favourite one and the closest thing to the real deal! :)

Guys without further delay here is the recipe:

Ingredients:

100g of soften butter

100g of plain flour

50g of rice flour

50g of custard sugar

A decent pinch of salt (or two)

Sift both flours into a big bowl, add all the remaining ingredients and combine together. When all is combined make a ball and wrap with cling film. Put into the fridge for around 45mins.

Prepare a square/rectangular tray and line with baking paper. Leave on a side.

After that time. Turn the oven onto 160C degrees on fan.

Take the dough out of the fridge and put it on your baking paper and using rolling pin gently fill up your tray with the whole dough.
Using fork then prick it gently.

Bake for around 30 - 40mins or until lovely and gold. Take it out of the oven and give it few minutes and cut to desired slices (if you leave it to cool completely it will break whichever way the cookies wants to!) and then transfer onto the wire tray and leave to cool.
