Bagels or Obwarzanki

Ok, so that might not be the most Easter treat ever, however it really does remind me of Easter.

I have made them last year for Easter to try out the recipe…. and…?! And they went so fast that I hardly made a picture of them!
They suited really nicely to go with a typical polish Easter soup, called “żurek” (don’t worry will explain shortly :)).

Those obwarzanki (alias bagels) are extremely popular in Cracow. If you ever visited this beautiful city you definitely know them as they were absolutely everywhere! That’s a small tip guys, if you ever there go to White Star Division Municipal Stadium and get them from there! Absolutely yum! Brings best memories of my Dad taking me there for football game and bringing those treats home after the football game and the four of us would eat them then and there (usually after 2am!!!) - trust me guys - so worth it!

Ingredients:

100g of milk

15g of dry yeast

20g of sugar

650g of cream / plain flour

1x egg

1x teaspoon of salt

25g of olive oil

250g of water

some extra milk

cheese to sprinkle the top

Start from lining the tray with baking paper. Leave on a side.

Take a small pot and gently hit of milk. Just to make it lukewarm. Mix with olive oil, sugar and salt.

In a big bowl mix all the dry ingredients including the yeast. Add warm ingredients and egg. Mix together. Dough should not be sticking to you hand.
Sprinkle the bowl with some olive oil. Put your dough in, cover with cling film, then cover with a blanket and leave in a warm place to rise for a good 30mins.

After that time preheat oven to 200C.

Prepare yourself a small ramekin with some milk an the cheese to sprinkle on top.

You should be able to make between 20-25 bagels from this recipe. Divide the dough for 4 pieces and roll each piece to make a long thick “rope” like piece - should be a bit thicker then the widest part of your thumb.

Now cut each of those lines for around 15cm length and by holding one end twist them around to make them look like bagels ;) Connect the ends using a bit of milk (to wet the ends). Move on to prepared tray.
Gently tip the top of the bagels with your finger with milk and sprinkle the cheese on top.

Bake for around 20mins.
