Doughnuts

The king of all the Fat Thursday - the doughnut or donut or in polish - pączek. The best of the best. Can be filled with so many goodies, yet the most traditional and famous to Poland is the one filled with rosehip marmalade/thick jam.

Can you imagine soft, spongy caky goodness with some jam inside? Mhmmm… it’s genuinely so good.

This is that one day throughout the year where my diet is a doughnut diet through the day and no regrets at all ;)

Recipe comes from Thermomix and is absolutely amazing! So worth trying!
P.S. I know some of you might be surprised why there is an alcohol in the recipe - it helps the dough to stop absorbing fat while frying, thanks to that doughnuts are way lighter and not so heavy on your stomach. Hmmm… sounds like a bit healthier? :D

Ingredients:

70g brown sugar

20g of dried yeasts

200g of room temperature milk

80g room temperature unsalted butter

3x egg yolks, room temperature

1x egg, room temperature

pinch of salt

500g of plain flour

2x tablespoons of vodka

small jar of rosehip marmalade/very thick jam

icing sugar for dusting

around 1 l of frying oil

Take a big bowl. Add your flour, salt, sugar, yeasts, make a big hole in the middle and add your butter, milk and eggs. Prepare the vodka on a side as well.

Now make a dough from all the ingredients. When dough will be almost ready add your vodka in and roll it out to make a ball. Leave in a bowl, cover with cling film and leave for around and hour or when it double the size.

When dough have doubled the size. There is two ways to make it:

  1. Version One - roll the dough for around 0,5cm and cut circles using a rim of a glass. Then add jam in the middle and close it and roll it to make a ball. When all ready leave on a side to double the size for around 20mins

2. Version Two - roll the dough for a rolling pin middle shape and cut for maybe 20x smaller pieces then each of them roll into a bowl. Leave on a side to grow.

Now while waiting for the balls to rise again. Heat up the pan with oil and leave to properly warm.

Prepare a tray and line it with kitchen towel.

When oil is ready fry the doughnuts for a lovely dark gold (but NOT burned) colour on both sides.

When ready remove them onto a lined tray, leave for few moments to dry, then using the kitchen pipettes filled with marmalade “stab” the doughnut in and filled with marmalade. Then sprinkle with icing sugar.
