But I will also experiment with some good recipes for other frutti di mare.

Because what that would be a chapter of Frutti di Mare with all of those goodies that you can find in the sea?

Can there be something better then quick pasta with shrimps coated with sweet chilli sauce? If you are not a fun of seafood stuffs that’s the only reason why I can understand your ‘No’ answer. :) Do believe me, it’s really good!

Fish – you can fry it on a pan or steam or grill, but you can also bake it in the oven or cover with aluminium foil and grill on a BBQ :) Why not? With some fresh grilled vegetables? It’s just yummy! :D

Yummy Lunch Idea

This lovely lunch was invented only few days ago when I was adamant that I will prepare myself lunch boxes for the whole week.

I literally open the fridge and went through every single part of it to see what I can make, so guys that’s what I could find there.

Ingredients:

1x bunch of rice noodles pasta (or any noodles of your choice)

1x teaspoon of butter (of choice) or oil

1,5x onion, peeled and sliced for half of the moons

3-4x garlic cloves, peeled and chopped

2-3x small carrots (or 1x big one), peeled and thinly chopped

1x jar of pitted olives (I used black ones), cut in halves

3-4x small sweet peppers, clean from seeds and chopped for julienne style

2x tins of tuna (preferably from brine), strain the water

1x small tin of sweetcorn, strain the water

1-2x handfuls of fresh baby spinach

1x feta cheese, crashed in hands on top

a good lush of sweet chilli sauce

salt & pepper

seeds mix (optional)

Preheat the kettle with water.

In the meantime take a pot for noodles, add some cold water in, put on the hob, cover with lid and bring to boil (usually takes the same amount of time as bringing the kettle to boil and will reduce the time of waiting for the boiling water). When that’s ready add your noodles and cook to al’dente. Leave some water from cooking on a side.

Start from taking the wok pan (or any big pan that you have), add your butter and start simmering it with chopped garlic, onion, then add carrots - you are adding what is the toughest/longest to cook first.

Then add your peppers, tuna, olives, sweet chilli sauce and some water from cooking the noodles (it will make a bit of a sauce). Then add your cooked noodles, spinach, sweetcorn, mix it all up. Sprinkle with salt, pepper and feta cheese.

Serve straight away with some seeds on top or pack i to your lunch boxes and enjoy! :)

Asik’s Twisted Salmon

The softness inside, the crunchy top, that melting part….

Mhmmmm… doesn’t it already sounds amazing? Interested? :D

Trust me! Give it a go! It is one of those meals that you will be happy to keep going back to :)

My bestie - Asia, was telling me about this insanely easy and good recipe. Intrigued (as always when it comes to food) could not help myself to give it a go!

So here you go guys - amazing toasted sandwich with a twist! Thanks Asia! ♥️

Ingredients:

2x slices of bread (toast bread would be the easiest one)

butter

1x slice of cheese

2x slices of smoked salmon

fresh chopped chive

small bit of freshly chopped onion (optional)

spreadable goats cheese (optional)

tartan sauce (optional)

fresh spinach/kale mix (optional)

Turn on your sandwich maker.

Put thin amount of butter on both slices.
On one slice add some goats cheese (optional), sprinkle with some freshly chopped onion (optional). Cover with slice of cheese, smoked salmon, very thin layer of tartan sauce (optional), add some spinach/kale (optional) and sprinkle with freshly chopped chive. Cover with the other slice.

Move to your sandwich maker and “cook” for around 3-5mins. Cut in half and enjoy!

Quick Lunch Meal

Nowadays life is all about preparing meals to go as so many places are not open… it’s a life of take aways. So why not to make something yourself that would be super fast, tasty and filling?

Now in that recipe if there is something that you are not a fan off- just skip it :) My base is onions, garlic and butter, the rest is add ons ;)

Ingredients:

1x medium size onion, peeled and chopped (whichever way you like)

2-3x garlic cloves, peeled and chopped

6-8x sundried tomatoes, chopped

300g of mushrooms, chopped

1x courgette, take of the ends, cut in half and chop for thin slices

1x bell pepper, chopped

1x handful of chopped spring onion (optional)

1x big handful of kale, spinach, mix (optional)

1x goats cheese- camembert style, chopped for smaller pieces (optional)

A bit of butter to start

1x decent splash of sweet chilli sauce

2x tuna in brine tins, without water

1x small package of crab/seafood sticks, peeled off the package and sliced for smaller chunks (optional)

1/2x package of rice noodles, cooked in slightly salted water

Take a big pot add cold water, some salt and bring to boil - that will be for noodles. Cook them in the meantime. Leave a small ramekin from the cooked water on a side.

Preheat big pan with some butter, add onion and garlic. Sprinkle some salt, turn the power down and leave to simmer.

In the meantime start chopping mushrooms, add them to pan. Follow with courgette, sundried tomatoes, spring onion, goats cheese.

Simmer for good 5-7minutes until all is cooked. Add your tuna and crab sticks, splash some sweet chilli sauce and that water from the small ramekin into. Simmer for 2mins.

Now add noodles and kale/spinach and bell peppers. Mix it all up. Season if needed and enjoy!

You can leave it to cool and then keep it in the fridge for up to 5 days :) Yum! ;)

Marcel’s Pâté

Have you ever think of making your own pâté? What about having it vegetarian? :D

Take a look into it how fast and easy it is to make. So guys! Here it is - the most amazing, lovely pâté, that somehow always remind me of that amazing couple from Norway - Iga & Marcel in which house you could always talk away with always (guys! ALWAYS!) something super tasty to eat :) Miss you guys!

Ingredients:

2x tuna tin in brine

2x eggs (for vegetarian version mix 2x teaspoons of crushed flaxseed with water - it will be a bit more runny though!)

3x tablespoon of thick cream (you can use the thick part from the coconut milk from tin instead)

a good handful of chopped parsley

1x onion

1x small jar of tomato paste/purée

1x full teaspoon of sugar

150g of grated cheese

butter

salt & pepper

Prepare small rectangular tray - line it with baking paper, leave on a side.

Preheat oven to 180C on fan.

Melt the butter on a pan. In the meantime chop thinly onion. Add on a pan, sprinkle with some salt and simmer until gold.
When ready add small jar of tomato purée/paste and sugar. Mix together.

Add all the remaining ingredients and move to prepared tray.


Bake for around 25min.

Enjoy!

Chine’s Style Shrimps Pasta

Chine's Style Shrimps Pasta

Prep time: 5 mins Cook time: 20 mins Total time: 25 mins

Ingredients

  •          a bunch of spaghetti noodles

  •         spring onion, chopped

  •          1x lime

  •          1x onion, chopped

  •          around 200g defrosted shrimps - it's up to your taste how much

  •          3-4 tablespoons of rice oil

  •          pinch of salt

  •          sweet chilli sauce

  •          freshly grated parmesan


Prepare yourself for doing couple things in the same time. Thanks to that, your belly will be a super happy belly shortly :)

  1.     Take a wok pan, add rice oil and heat it up.

  2.      Take a pot, filled it with water and bring it to boil. When ready cook pasta to al dente. But leave some water from it.

  3.      Go back to wok pan – when wok is hot, add chopped onion with pinch of salt. Simmer that quickly on lower heat. When your pasta is almost done, add shrimps – they don’t need much time on a pan. Add pasta with some water (around 40-50 ml) from cooking (most of that water will evaporate, but the rest will make a nice sauce base). Add grated lime zest, chopped spring onion and sweet chilli sauce. Mix it, try if it’s spicy enough. Move to a plate, squeeze some lime juice around and cover with parmesan cheese. Enjoy!

P.S. It can be gluten free and dairy free as well – just change parmesan cheese for other cheese and pasta, for rice noddles :)
