Nigella’s Pancakes
Let me tell you something about those pancakes! They are one of my absolute favourite treat and to be quite honest one of the first Nigella Lawson recipe I’ve made as a child and I just fall in love with them, the same as my family and friends.
They are just so nice and fluffy and topped with some yummy goodness is just heaven… mhmmm…. Honestly I’m hungry now ;)
Ingredients:
250g of ricotta cheese or your favourite yoghurt in vanilla flavour a bit thicker consistency
125ml of milk
2x eggs
100g of plain flour
1x teaspoon of baking powder
pinch of salt
2x teaspoon of some type of fat (oil, melted butter, etc)
There is 2 ways of doing them.
Version 1 (Super lazy one ;)) - take a bowl and mix all the ingredients in.
Version 2 (Not so lazy) - take 2 bowls. In one bowl add your egg whites and pinch of salt and then into the second bowl add all the remaining ingredients, mix them well. Then beat your egg whites fully and then gently add them into the mixture to the other bowl.
This part is the same for both - heat up the pan, then turn the heat down to medium and pour some butter in and fry for few minutes on both sides until lovely and gold.
Serve straight away! Enjoy!
