Porter Cake

This recipe is one of the classic typical Irish cake. Lovely and moist filled with fruits and a specific crust on top. It is one of those cakes that great great mum’s would bake for their loved ones all the time.
As my mum in law says- the porter cake was her brother favourite cake and her mum would always made a batch of them. Yeap you reading it right, they would bake a good few loafs of them and thrust me when I say it would be gone in few days ;)

This recipe comes from “Catherine’s Old Time Recipe Book”.

This recipe is for 1 tin loaf.

Ingredients:

225g of flour

225g of dry fruits (raisins, cranberries, etc) I put them into a bowl and cover with hot water and leave for maybe 15-20mins while preparing other bits

120g of sugar (I use demarara)

1x teaspoon mix spice (you can get the ready to go one or I’ve used the mulled wine spice)

115g of melted butter

1/2x teaspoon of bread soda

125ml of porter beer (like Guinness) in room temperature

2x eggs

decent pinch of salt

Prepare the tray and line it with baking paper. Leave on a side.

Turn on the oven to 170C degrees.

Take a big bowl and sieve flour, add drained fruits and all other ingredients. Mix well with electric mixer for few moments and move to prepared tin.

Bake for around 2 hours or until skewer comes clean.
Remove to cooling rack and leave to cool.

Enjoy with a nice cup of tea. :)
