Sweet Potato Pancakes
Those pancakes are lovely and fluffy and give that bit of a comfort food feeling.
They are definitely worth a bit of effort and try them out!
Recipe comes from Thermomix cookbook and is so worth trying ;)
Ingredients:
1x small sweet potato, peeled and chopped, then cooked (around 150g after cooking) and then make a puree in blender
30g of unsalted butter, melted, plus a bit extra for greasing the pan
240g of milk
1x tablespoon of lemon juice
1x egg
Pinch of salt
30g of brown sugar
1/2x teaspoon of vanilla extract
170g of flour
1x teaspoon of baking powder
1/2x teaspoon of bicarbonate of soda
Pinch of ground nutmeg and cinnamon
Anything that you wish to serve it with - fresh fruits, yoghurt, maple syrup, nuts, etc
Take a bowl and mix all the ingredients together.
Heat the pancake pan with a small amount of butter and cook your pancakes until golden brown on both sides for few minutes on a medium high heat.
Serve straight away with anything you wish!
