Mojito Cake
I found this recipe in one of the Tesco Magazines. It really get me intrigued. I look through the recipe, but there was so much stuffs missing. So why not to twist it? :D Make it feel like a real mojito piece ;)
Mojito Cake
Prep time: 15 mins Cook time: 30 mins Total time: 45 mins
Ingredients
250g of unsalted butter
250g of demerara sugar
5x eggs
260g of plain flour
2x teaspoons of baking powder
pinch of salt
1x teaspoon of vanilla extract
2x tablespoons of milk
3x limes, zest and juice
around 50 - 70 ml of white rum (like Bacardi)
300g of light creamy cheese (like Philadelphia)
100g of icing sugar
fresh mint leaves
Preheat oven to 165C.
Take a round medium size tin and line bottom with baking paper, and rounds cover with a bit of butter and sprinkle with flour.
Sift to one bowl flour and baking powder.
Take another bowl and beat butter with demerara sugar until fluffy with mixer. Now add one by one eggs. Add a pinch of salt. Keep mixing. Then gently keep adding flour with baking powder, milk, vanilla extract and as a last add zest and juice from 2 limes and some chopped fresh mint leaves. Oh yes, and the final ingredient pour around 20ml of rum. Mix nicely. Move to tin and bake for around 30mins or until lovely gold.
After that time take it off the oven and pour another 20ml of rum on a hot cake. Let it cool.
When your cake is almost ready. Mix creamy cheese with icing sugar, zest and juice from 1 lime and the rest of your rum.
Cover your cake with it and decorate with fresh mint leaves. Enjoy!
