Queen Cakes
Today we have something more traditional to the Irish baking Queen Cakes also known as Fairy Cakes.
Very light fluffy cupcakes/muffins/mini cakes that you can eat on it’s own, slice half and filled with jam and whipped cream - makes it more like Victoria Cake.
Here it is super quick and lovely cakes.
It will make 6 big muffins or around 10-12 smaller ones.
Ingredients:
100g of softened butter
100g of caster sugar or brown sugar
150g of flour
1x teaspoon of baking powder
2x eggs
1x splash of vanilla extract (optional)
1x tablespoon of warm water
Prepare your muffin tray and line it with cupcake paper. Leave on a side.
Turn the oven on fan, 195C.
In smaller bowl sieve flour and baking powder, mix and leave it.
In a small bowl add your eggs with pinch of salt and leave it.
In a bigger bowl whipped butter and sugar together until fluffy. Then add your eggs. Keep going until well combined and getting fluffier again and then add slowly your dry ingredients. As a last part add your vanilla extract and warm water.
When well mixed move to prepare tins and straight to oven. Bake for around 15mins (small ones), 20-25mins big ones. Leave to cool and eat in whichever way you prefer! :)
