Sweet Potato Rolls

Ok, that might sound a bit odd to you guys, but I promise you have not taste something that would be so insanely good.

To be fair next time I will be making them they will be filled with jam inside as they just taste like a healthier version of donuts! Yes! They are! I’ve tested them on the myself and family to see what they think and to gather the feedback and everybody sing the same song - filled with jam and they are donuts.

Imagine amazing softness with the most delicate outside crust covered with vanilla icing sugar… hmmm… just yum!

This recipe is original to Thermomix and (surprisingly) I have not change a single thing as they are just so good! Just add the jam (next time ;) )

Ingredients:

This will make around 10 goodies.

250g of peeled and cut for smaller parts sweet potatoes, cooked in gently salted water, then leave to cool

125g of milk

20g of sugar

1x bag of instant yeasts (10g)

50g of soften butter

1x egg

500g of plain flour, plus extra to make a dough

vanilla icing sugar for the top

jam (if you planning to fill them, now don’t use any jam, best ones are marmalade type - but not orange marmalade- you can get the thickness of them in many other variants - strawberry, wild roses, etc The reason for it it is only because otherwise the juice of the jam will leak through and you don’t want that)

Blend cooked sweet potatoes for a puree together with butter, milk and egg (if your puree is cool enough- you don’t want to make a scramble. Otherwise add the egg to your dry ingredients.
Prepare the bowl with all the dry ingredients mix together. Add all the wet ones make a nice dough - dough should not stick into your fingers.
Cover with cling film and leave in a warm place to rise for an hour.

After that time take the dough out of the bowl, make a roll out of the dough of and even’ish sizes and now you have two options:

  • At this stage you can flatten gently in your palm a bit of your dough circle and add some jam to it and then make a ball

  • Make a ball and after you bake it you can add some jam using filling piping tube.

When your balls are ready cover them with a kitchen towel and leave for additional 20-30mins.

Preheat the oven to 180C degrees (on fan) and bake for around 18-20 mins or until lovely and gold.

When ready move to a cooling tray and sprinkle with vanilla icing powder.
