6 Ingredients Dinner
The quickest and easiest dinner idea ever!
It’s for one of those sunny and beautiful days that you do mot want to missed out and stay long in the kitchen. This dinner is made in just 15mins (on white rice) or 30mins (on brown rice).
Yummy, easy, fast and deliciously good!
Ingredients:
4 - 6x chicken breasts
small amount of butter
Winiary Bell Pepper paste
150ml of coconut milk from tin (mixed the top and bottom part)
rice of choice (I used brown) - cooked as per instructions on the box/package
1x small tin of sweetcorn (optional)
small bunch of fresh oregano for decoration (optional)
Start with cooking brown rice (pot of boiling water, pinch of salt and then add your rice of choice).
In the meantime take a big pan with a cover. Add some butter into pan. Do not put the heat yet!
On the chopping board you can take off the bits of chicken you don’t want and then what I normally do is make a cut along the breast itself to have it open flat, but I don’t cut it off fully it’s still connected to the chicken. It’s just quicker to be done in a pan. If you prefer you can always cut the chicken breasts for smaller pieces and cook it like that. Usually when I’m halfway through I turn on the hit under pan.
Just gently cook the chicken on both sides.
When it’s just gentle white and golden from each side I’m adding the bell peppers paste and coconut milk. Bring to boil, half cover with the lid and leave to simmer for 10mins.
After 10mins I would just close the lid fully and turn off the hob, but leave the pan where it was cooking and just wait for the rice.
When rice it’s ready just add sweetcorn (optional) to your chicken and sauce, mix gently and serve immediately.
Yeap guys! That’s it! You can sprinkle some fresh oregano on top for decoration.
