Thai Sweet Potato Soup
I was mouthwatering after seeing this recipe the first time - yeap of course it was on Thermomix! ;) (in fairness they have some amazing recipes out there) - and since I made my curry from scratch years back I’ve decided to give this recipe a go with - of course - my little twist.
But if you are looking for something a little bit different but refreshing trust me when I say that you won’t be disappointed.
Now if you are vegan or vegetarian just swap the chicken for something your choice.
This recipe is genuinely so good and a perfect go to for a cold days, like we have now in Ireland ;)
Ingredients:
500g of chicken breast, cut for smaller pieces
500-600g of sweet potatoes, peeled and chopped for smaller cubes
around 3-4x teaspoons of curry paste (I use the green one)
few curry leaves
1x small onion, peeled and chopped
4-5x peeled and chopped garlic cloves
1x thumb size, peeled and chopped ginger
splash of olive oil or butter
600ml of coconut milk from tin
200ml of warm water
a small handful of fresh coriander
salt and pepper
2x packages or around 300g of cooked rice (cook that while making the soup)
Take a pot and add your splash of oil or butter and simmer your onion and garlic with some sprinkle of salt. At the end add your curry leaves (optional). When that’s ready, add your sweet potatoes, ginger and chicken.
Gently simmer and mix all together to get all those flavours in and then cover with coconut milk, extra water and curry paste and bring to boil. When boiling, cover the pot and leave to simmer gently for 30mins or until potatoes are lovely and soft.
In the meantime you can cook the rice.
When soup is nearly ready add some coriander in, salt and pepper or more curry paste if desired.
Served with rice straight away then sprinkled with some fresh coriander!

P.S. In case it is too spicy for you - you can add some freshly squeezed lime juice :) always does the trick! ;)
