Pesto Chicken & Bacon Pasta
This recipe I’ve only made last night and it was gone by the time I’ve even said “Enjoy!” ;)
It is genuinely super easy and fast recipe, full of flavour and just so good! Can’t miss on this goodness! :)
Ingredients:
3x big chicken breasts, cut into smaller pieces
@150g of chopped smoked bacon
@40-50g of pesto
1x teaspoon of butter (if needed)
spaghetti pasta
some parmesan cheese
some mozzarella balls (optional)
fresh basil for decorations
Take a big pot for your pasta, pour water, cover and bring to boil. Add pinch of salt and add the amount of spaghetti pasta you wish I made it for around 3 people.
In the meantime in the big pan add your bacon and simmer gently, when fat starts coming add your sliced chicken and simmer until lovely and gold. If your bacon do not have enough fat just add the spoon of butter
When your pasta is nearly ready in the lovely al dente type. Add your pesto to chicken and bacon, and a good few tablespoons of water from boiling pasta, just to make like a nice thick “sauce”. Turn the heat off and then add your pasta to your pan with bacon and chicken pesto, mix nicely. If there is need you can add some extra water from pasta (water from pasta contains starch that makes that lovely sauce ;) just a tip).
Then sprinkle parmesan cheese and you can break in your hands some mozzarella and just add it around. You can cover for few minutes just to allow the cheese to melt, decorate with fresh basil and serve straight away!
