Clafoutis with Berries
Since I’m recently in a French mood I thought – way not to make this classic? :) So what I can say you about it… For me it’s not like a typical cake, it’s more like crepes cake with berries and amazing sauce on top from berries juice. It’s perfect for some original lunch with friends and family :) And thanks to that you can already feel summer ;)
This recipe came from one of the magazines I bought in Ireland. And originally it’s served with pitted cherries.
Prep time: 20 mins Cook time: 35 mins Total time: 55 mins
Ingredients
600g of fresh mixed berries - I used strawberries and blueberries
80g of plain flour
½x teaspoon of salt
4x big eggs (or 5x smaller ones)
180h of milk
65g of butter
extra butter for covering square tin for baking
60g of brown sugar (but if your berries are sweet add only 50g)
extra 2x tablespoons of brown sugar for sprinkling mix with some cinnamon
Preheat oven to 200C.
Prepare your square baking tin with butter. And put it inside the oven straight ahead to warm up with oven.
Melt butter on low heat and leave it to cool gently.
Sift flour to one bowl. In the other one beat eggs with salt and sugar. When your mixture is nice and fluffy you can slowly start adding flour and milk. And as the last one your cooled melted butter.
Take your hot tin with melted butter from the oven, filled it with mixture and on top put your berries. Bake for around 30 mins. After that time sprinkle with remaining sugar and cinnamon and bake for another 5 mins to make nice crust.
Serve straight ahead with some ice creams or crème di anglaise. It’s just yummy! Enjoy!
