Pizza Omelette

Why is it called “Pizza Omelette”, because it’s actually the same, that I would put on the pizza dough, it just I was too hungry, to make first a dough, so I put everything on the omelette :D Don’t say you don’t do it?

Pizza Omelette

Ingredients

  • 3x eggs

  • 2x tablespoons of milk

  • 1x shallot

  • 1x fresh tomato

  • some olives

  • some feta cheese

  • freshly grated cheese (Gouda, Emmental, etc.)

  • thyme for garnish

  • salt and pepper

  • olive oil/ rice oil/ butter


Preheat medium size pan on medium heat. Add some olive oil.

Chopped shallot, simmer them on the pan.

Take a small bowl, break eggs inside, season them with some salt and pepper (be careful with salt, when you are using salty cheeses) and beat them nicely with 2x tablespoons of milk. Make a nice fluffy mixture. Cover your lightly gold onion with egg mix. And then start adding all the rest of the ingredients around, except thyme. Turn the heating on low and cover pan with a lid. Leave it to simmer for around 6-8 mins. Check after 5 mins, how does it look like, from underneath, if it’s not getting too brown and if you are able to lever up your omelette easily. Wait until eggs will be settled, garnish with fresh thyme and serve it! Enjoy!
