Meaty Strawberry Lust
This recipe I found in one of the polish magazines and it’s soooo good, that it would be a waste not to let you know it! It’s just way to yummy! Especially if you are a fun of strawberries, this recipe is like a first preview of summer.
Prep time: 15 mins Cook time: 45 mins Total time: 1 hour
Ingredients
1kg of sirloin of pork (I know it's much, but sirloin will shrink while cooking)
1x bigger lemon, juice
1½ tablespoons of honey
3½ tablespoons of soya sauce
4-5x shallots, chopped
2x tablespoons of olive oil
freshly ground pepper
around 500-600g of fresh strawberries
40 ml of white wine
a handful of fresh basil
Mix lemon juice, honey and soya sauce, cover sirloin of pork with it and leave for a while (in the original recipe they asked to leave it for an hour, but I was way too hungry to wait so long, so I just prepare the rest of ingredients and preheat oven in the meantime ;)).
Preheat oven to 180C.
Take a rectangular shape oven safe pie dishes, cover with some olive oil, sprinkle chopped shallots on it and on top put your meat. Sprinkle with a bit of olive oil and freshly ground black pepper. Pour 2 tablespoons of water, 20ml of white wine and put it to oven. Cook for around 35-37 mins.
In the meantime wash and hull all strawberries. You can sprinkle half of them with some aceto balsamico di Modena (if you want to) and 1 teaspoon of sugar.
When your pork is almost done, take it from the oven, add remaining white wine and half of your strawberries (those with balsamico). Put it back to the oven and bake for another 8 mins.
After that time take it off your oven, add remaining strawberries and sprinkle with basil leaves. Serve straight ahead! Enjoy!
